Persimmonlicious!

Hello there my lovely readers, I’m back after a short hiatus. Been a busy little bee….you know how it is but I did miss you all so couldn’t stay away too long 😉

As the title suggests; this post is going to be about making Persimmons sparkle!! I don’t know about you guys but I’ve never really warmed to Persimmons. They always seemed like a blah fruit to me as they have such a subtle flavour. I thought this for a long time and never really used them in anything….until now.

This all began when I happened to buy some Persimmons as they are currently in season and wanted to try and use them in something. So I played around with some flavour combinations and came up with a pretty delicious jam recipe.I do feel however that they will be good in stews as well…like with Lamb and potatoes or as a chutney with bread and a cheese platter but that my dears is a post for another time. For this post, I will be sharing with you my fabulous ad hoc Persimmon jam recipe that has quite a kick. It will totally transform the way you feel towards this fruit. This recipe was so easy that you can do it with your eyes closed (but don’t as you need your eyes for this!). Just note that this recipe is more of a guideline so add/remove or substitute to your heart’s content 🙂

Azzy’s Persimmon jam recipe

Ingredients:

  • 2x Persimmons (make sure they are a bit firm)
  • brown sugar
  • water
  • Juice and zest of 1/2-1 Lime
  • 3x Cinnamon sticks
  • 2 tsp ground chilli powder

Method:

  • peel and chop the Persimmons in segments
  • in a pot with medium heat simmer the water, Cinnamon sticks and Chilli powder
  • add the sugar and lime zest and let the mixture slowly come to boil
  • add the Persimmon segments and the Lime juice and let simmer for 10 mins
  • taste the mixture and add whatever spice or ingredient that seems to be missing
  • let the mixture simmer until the Persimmons are cooked
  • at this point you can remove the Persimmons and reduce the mixture further  (this is optional)
  • serve on sourdough with butter and garnish with grated Pistachios

Hot tip: The water to Sugar ratio needs to be half i.e. If you use 1/2 cup of Sugar then add 1/4 cup of water
